For centuries, underground caves and cellars have protected wines and cheeses from the extremes of the Castilian climate. In these silent spaces, darkness, humidity and time slowly transform simple ingredients into extraordinary flavors.

This journey invites you to step into that underground heritage.

Over six days, we will explore historic wineries carved into the earth, descend into secret cheese maturation caves, and meet the artisans who keep these traditions alive.

Along the way we will taste exceptional wines, discover the complexity of cave-aged cheeses, and experience the quiet beauty of rural Castilla during the most vibrant moment of the year: the harvest.

ITINERARY OVERVIEW

 

Day 1 – Arrival in Spain

Meeting point at Madrid Airport. Transfer to our countryside retreat in, rueda region, Castilla y León. After settling in, we gather for a welcome dinner.

 

Day 2 – Underground Wines of Rueda

We descend into the historic cellars of Bodega de Alberto, where centuries of winemaking tradition live beneath the surface. After lunch in Matapozuelos, we visit Quesería Campoveja to learn about traditional sheep cheese production.

 

Day 3 – Secret Cellars & Artisan Cheeses

 A private tasting at Bodegas Mocén, where art and wine share the same underground world.  A refined lunch highlights the region’s finest local cuisine, followed by an afternoon of relaxation in a historic wellness & spa.  As evening falls,We’ll have the chance to witness the magical nighttime harvest under the stars

 

Day 4 – Wine, Cheese & Rural Landscapes

we descend into the historic Bodegas Muelas—a labyrinth of stone, silence, and fine wine. A memorable lunch at AN INNOVATIVE REST leads us to an enlightening visit at GRANJA CANTAGRULLAS, DISRUPTIVE cheesemaking.  

 

Day 5 – A Taste of Madrid

We return to Madrid and celebrate the journey with a final tasting experience at Cultivo, a tribute to modern cheesemaking and flavor innovation..

 

Day 6 – Farewell

Breakfast and departure. The journey ends, but the flavors and stories travel home with you.
